Husk Distillers Pure Cane 50 is crafted by Husk Distillers in the picturesque Northern Rivers region of NSW.
Inspired by the diverse and vibrant rum culture of the Caribbean islands and a yearning for fine Australian spirits, distiller Paul Messenger, along with his wife Mandy and daughters Harriet, Edwina & Claudia, embarked on a journey to create a plantation distillery on their cattle & cane farm, nestled in the green caldera surrounding Mt Warning in Northern NSW.
Husk’s vision was to create a premium, paddock to bottle agricole rum with a unique Australian expression. Their journey is now in it’s eighth year. They had to develop new skills and adapt new methods of small-scale cultivation, harvesting and crushing not used in the area before. They designed their distillery based on fermentation, distillation and maturation methods not typically used in commercial rum distilleries and the result is a rum that they are proud to say has the unique characteristics of our part of the world – true provenance.

LIME SUGAR PURE CANE… so simple.
- 60ml Pure Cane
- 1/2 teaspoon raw sugar
- 1 lime disc
Squeeze and drop lime slice into a short glass over sugar. Pure over Pure Cane Rum and ice is desired. Sir, sip slowly, and enjoy!

Husk Distillers teamed up with Mauricio Gamba to develop our signiature Cabarita Caipirinha cocktail using Husk Distillers Pure Cane 50 Rum.
Mauricio hails from Brazil where the national cocktail is the Caipirinha. Adding some flair to his North Coast interpretation, Mauricio uses Pure Cane, native honey and grilled sugar cane from the Husk Plantation to create the Cabarita Caipirinha.
- 60ml Pure Cane
- 4 lime wedges
- Teaspoon of Australian honey
- Teaspoon of brown sugar
- Grilled sugar cane (optional)
Combine all ingredients in a cocktail shaker and fill halfway with ice. Shake hard for 30 seconds and pour over ice into an old fashioned glass. Garnish with grilled sugar cane stick.
