Plantation Extreme No3 ITP 22 Year Rum

, ,

Plantation Extreme No3 ITP 22 Year Rum is the third release in Plantation’s ‘Extreme’ range and is one of two expressions both coming from the Long Pond Distillery in Jamaica. Both were distilled in 1996 and spent 21 years maturing in ex-bourbon barrels before Ferrand’s traditional finishing in cognac casks in France. They are the result of two slightly different ‘recipes’ known as marques (pronounced marks) labelled HJC and ITP respectively.

For Long Pond, their ITP marque is the slightly lighter of the two marques. The ITP is the fruitier of the two, fermented for three weeks with an ester count of 386 g/hl AA. Just over 2000 bottles of each were made for the worldwide market, with a very small allocation making its was to Australia.

Bottled at cask strength and these Plantation Extreme expressions with no added sugar (dosage).

Plantation Extreme No3 ITP 22 Year Rum as with most Plantation rum is first aged for many years in the Caribbean, in its hot and humid climate, generally in young bourbon casks. When they reach maturity or a desired age, they are shipped to Maison Ferrand’s Château de Bonbonnet at cask strength in order to preserve their richness of aroma and flavor.

There, they are finished by Maison Ferrand in their ‘traditional style’ for several months to a year in cognac casks in order to give them more roundness. Many of the standard Plantation rum range also have sugar added (called ‘dosage’ by some French producers) in order to create the sweeter rums that Plantation are best known for and popularly used by bartenders for mixing cocktails and tiki drinks.
