Black Tot Historic Solera Rum balances the fruity, honeyed notes of Barbadian rum, the rich, full-bodied elements of Guyanese rum and the funkiness of Jamaican rum. The combination of these countries creates a flavourful, multi-layered blend.
The solera process, traditionally used in production of sherry, has been masterfully adapted for Black Tot Historic Solera Rum, resulting in a spirit of unparalleled richness and complexity. Crafted using an authentic three-tiered, 70-year-old Sherry cask solera system, this rum boasts deep, nuanced flavours which cannot be replicated using newer, seasoned casks.
Before entering our 46-strong sherry butt solera, the award-winning Black Tot Finest Caribbean rum is aged in both oloroso and PX sherry casks for up to 2 years. From this ageing alone, the rum develops rich flavours such as dried fruit and winter spices, which is then added to our three-tier solera. After spending a year in each criadera (tier), a portion of the oldest rum is drawn for bottling. The cask is then replenished with rum from the next tier, allowing the process to continue seamlessly through the tiers.
The final criadera, known as the solera, always retains a portion of the original rum, ensuring that each bottle is a blend of rums of various ages. This method adds depth, complexity, and the unique flavours of Jerez, resulting in a consistently high-quality rum that tastes unlike any other.
