Four Pillars Bloody Shiraz Gin

Our home is in the Yarra Valley, where our neighbours make some of the finest wines in the world. So in 2015 we combined our Rare Dry Gin with some of the best Shiraz grapes in Australia to create our Bloody Shiraz Gin for the first time. And now each year we steep Yarra Valley Shiraz grapes in gin, and after eight weeks we press the fruit before blending with more Rare Dry Gin.

Using the incredible calibre of cool climate fruit available to us in the Yarra Valley, Four Pillars Distillery steeped their first Yarra Valley Shiraz grapes in 2015 in high proof Rare Dry Gin for eight weeks. After eight weeks the fruit was pressed before blending with more Rare Dry Gin. The resulting gin was a little bit of a success, and so in 2018 they’re now onto the fourth (and possibly the best) vintage release.

The 2018 release has great depth of colour and is much richer and more vibrant than 2017, carrying really beautiful purples and reds to bottle. Flavour-wise it’s showing dark fruit, red berry and spice. There is also plenty of that classic Yarra Shiraz white pepper. And of course a lovely ginny character carries those grape aromas, making it unmistakably gin. The palate is lovely and sweet, with long juniper and spice characters to finish.

Four Pillars Distillery took delivery of their custom-built still from Carl of Germany, and called her Wilma (after Cameron’s beautiful but explosively tempered late mother). And Wilma turned out to be amazing, drawing extraordinary botanical flavour from a combination of rare, native and traditional botanicals.

She delivers an unbelievable purity of spirit (the gin comes out of Wilma at 93.5% ABV) despite Four Pillar’s unique approach of distilling their benchmark Rare Dry Gin with fresh, juicy biodynamic and highly-aromatic oranges.
