A message about “Our Story” from the Founders:
“In late 2016, Manda asked the the question, “If you could do anything, and money wasn’t an issue, what would you do?”
My answer “Open a distillery”.
It kind of just made sense. We always enjoyed the Melbourne Gin scene, with a love of everything craft.
From that moment on, we stopped looking for a house to live in, but rather a place to build a distillery.
In 2017, we settled on a place (it was being constructed), a name and an agreement to put it all on the line.
It took until June 2018 to get open and since that day we live by one motto. Try and make the gin better every day!
With the continued drive you find us here, early 2020, with a head full of ideas, a couple of bottles of liquor that we think are pretty good, a Distillery in outer South-East Melbourne and and the hope that we make it to 2021 with the dream still alive. The dream to make our own Gin, Whiskey and Liqueurs to a standard that makes us proud. We want to walk into some of Melbourne’s great Gin Venues see our product competing with the big boys. Yet at the same time, we want to make the best product without compromise.
We Pride ourselves on doing absolutely everything ourselves. We make our base spirit from a wine we make with Kale, Sugar, Water and Yeast. We turn this wine into Vodka by running it through our 6 Plate Australian Built copper column, and then turn this Vodka into our 3 core range Gin’s as well as a few experimental ideas.”
